VEG&LAIT speaks at the ASSO LEGGO Crossroads

Launched in March 2024, the VEG&LAIT project aims to create a sustainable mini-sector for mixed milk and legume products, based on a network of dairy farms for the production and processing of legume ingredients, and their use in products such as dessert creams, yogurts, and ice creams. VEG&LAIT is led by the STLO joint research unit and funded by the French National Research Agency as part of France 2030 (ANR-23-PLEG-0006).

The Association LEgumineuses à Graines du Grand Ouest (ASSO LEGGO) was founded in 2020 under the auspices of the Chambers of Agriculture of Brittany, Normandy, and the Pays de la Loire.

Its mission? To bring together players in the plant protein sector in order to contribute to the relocation of these strategic sectors for human food in France. Created as a collective project, the association was quickly adopted by producers, processors, distributors, and restaurateurs to meet human consumption needs. It helps its members build the French plant protein market. Although the association does not sell products, it helps companies find suppliers, meet customers, and find or even create new products. Through its knowledge of the network and the issues at stake, ASSO LEGGO contributes to technical support, networking, and highlighting the work of VEG&LAIT.

This enabled Gabrielle Jagorel and Fanny Guyomarc'h (UMR STLO) to present the project at the  LEGGO carrefour event on December 18, 2025, in Loué-sur-Sarthe, as an example of a public-private partnership research project and of the complementary nature of crops and livestock farming for sustainable food systems.
