Edible Soft Matter 2025

3rd edition of the international Edible Soft Matter conference

Three units of the INRAE Bretagne-Normandy centre, OPAALE, STLO and NuMeCan participate in the organization of the 3rd international Edible Soft Matter conference, on July 7–10, 2025, together with the Institute of Physics of Rennes (IPR) and the Rennes Institute of Chemical Sciences (ISCR).

After the editions in Le Mans (2019) and Wageningen (Netherlands, 2022), the conference will gather more than 130 academic and industrial participants on the Beaulieu campus, in Rennes, on the application of soft matter physics to food systems, gels, emulsions, foams, suspensions… All dimensions will be addressed, from production to nutrition, in 40 oral presentations and 50 posters.
