Lactic acid bacteria, widely used to produce fermented foods or probiotics, are known to produce EPS in a species- and strain-dependent manner. As part of this internship, we will study i) the production of EPS by different strains of lactic acid bacteria already identified as EPS producers; ii) the rheological properties conferred by the production of these EPS.

Encapsulation of a DHA oil: how to modify the physiological fate of nutrients by optimising feed digestibility

DHA (Docosahexaenoic Acid) is an omega-3 fatty acid that we still don't get enough of on our plates, even though it is essential for brain and heart health. Eating fish to make up for this shortfall is an interesting strategy, but one that has a negative impact on the biodiversity of our oceans. Consuming foods enriched with DHA is another relevant strategy, optimised here by a food formulation that improves the digestibility of the oil.

Amino acid requirements of infants: are they adequately covered by infant formulas?

Breastfeeding is the ideal way to feed infants. However, when breastfeeding is not possible or not desired, infants are given infant formulas, mainly produced from bovine milk. There are still differences between human milk and infant formula, including a different protein profile and amino acid composition, as well as different protein structures. In order to optimise these infant formulas, it is essential to gain a better understanding of the bioavailability of amino acids in infant formulas compared with human milk.

When alpha-lactabumin meets polyphenols : insights into its interactions with the epigallocatechin gallate and procyanidin.

At STLO, we don't need to introduce you to proteins! But we're less familiar with polyphenols, a large family of organic molecules with complex properties. Mainly of plant origin, polyphenols provide defense, coloring and reinforcing functions for plants and their fruit. Useful in plants, interactions between polyphenols and proteins can be detrimental in foods, causing astringency through interaction between dietary polyphenols and salivary proteins, for example, or altering digestibility.

L’ Institut Agro in association with INRAE, STLO and the INFOGEST network will host the 2nd joint intensive program dedicated to “food digestion: in vitro methodologies and future challenges”. This program is funded by the European Union's Erasmus + program and has been built in collaboration with the European universities of Leuven, Copenhagen, Wageningen and Gdansk.

A five-strong STLO team, led by Ghazi Ben-Messaoud et Thomas Croguennec, joined Julien Bauland (former STLO doctoral student) and Thomas Gibaud (his post-doctoral supervisor at École Nationale Supérieure de Lyon) at the European Synchrotron Research Facility in Grenoble, France, from April 10 to 14.

NERDT, a new biomimetic in vitro digester

In order to study food digestion in humans, research teams are developing artificial digesters that enable food digestion to be studied under standardized, reproducible conditions. The NEar Real Digestive Tract (NERDT) is a new-generation dynamic biomimetic digester consisting of a life-size silicone stomach that simulates stomach contractions.

VEG&LAIT mobilizes on participating farms!

Blandine Renault and Maïté de Sainte-Agathe, PhD students at UMR Agronomie, and Gabrielle Jagorel, contract research engineer at UMR STLO, joined the VEG&LAIT project consortium in September 2024. They are working respectively on the integration of pulses into dairy production systems, and on the use of flours or concentrates from such crops in innovative recipes. Over the past few months, they have been able to take part in training courses and workshops on the Invitation à la Ferme network farms involved in the project.
