Foam party with Stéphane Pezennec and Isabelle Cantat at the festival "Pint of Science" ! On Monday May 13 at the Reine de Cœur bar in Rennes, foam was in the spotlight! Isabelle Cantat (university professor, researcher at IPR, CNRS silver medalist) and Stéphane Pezennec (researcher at UMR STLO, head of the PSF team) shared the floor to reveal the secrets of liquid foams to a curious public.

Pint of science is a festival dedicated to democratizing science, with the motto "Let's take science and scientists out of the lab and into the pub".  During the festival, scientists come and share their research with the public, in a convivial setting that facilitates exchange and discussion.

On monday, it was Isabelle Cantat and Stéphane Pezennec's turn to share their common object of study, on which they have already been collaborating for many years: liquid foams. Liquid foams can be found everywhere in everyday life: shaving foam, fire extinguisher foam, stiff egg whites and, of course, beer foam! But what are they made of, and what are the mechanisms behind their stability? These are intriguing questions...

During the evening, the curious public was able to discover, through live experiments and presentations, how foam is formed in beer, why some foams are stable while others collapse rapidly, and what is the role of what role proteins played in the foam, how they organized themselves in the interfaces, how the liquid flowed between the bubbles...
