Kick-off meeting of SaToRix project

This 4-year project, which is funded by the ANR, is under the direction of Yacine Nia (ANSES), and involves three partners: the ANSES Food Safety Laboratory, STLO and ACTALIA.

As the development and consumption of plant-based foods continue to rise, new food safety questions emerge — particularly around Staphylococcus aureus and its ability to produce enterotoxins in these matrices. While typically associated with animal-based products, the behavior and risks of S. aureus in plant-based foods remain underexplored.
SaToRix will focus on:
1. Characterising enterotoxin-producing S. aureus strains, especially newly identified enterotoxins, using omics technologies
2. Studying their behavior and toxin production across various plant-based matrices
