Margot defends her thesis!

On Tuesday, November 4, Margot Grostete will defend her thesis entitled “Study of fouling mechanism in falling film evaporator by microscopic and microfluidic approach.” The defense will take place at 2 p.m. in the Camille Moule amphitheater (building 11 at the Institut Agro Rennes-Angers at 65 rue de Saint-Brieuc, Rennes).

After three years of research at STLO, Margot Grostete will defend her thesis on November 4 at the Camille Moule amphitheater at the Institut Agro Rennes-Angers.

Under the supervision of Luca Lanotte (STLO, PSF team), and co-supervision of Maude Jimenez and Romain Jeantet, Margot focused on the mechanisms involved in the formation of protein deposits that form on contact with hot surfaces during heat treatment operations on milk or whey, particularly vacuum evaporation. These deposits impair process performance by increasing energy and cleaning costs and reducing product quality. In her project, Margot developed new methodological approaches to observe these mechanisms at the molecular level. Come and discover what happens in a factory... under a microscope lens!
