STLO at the IDF world dairy summit

The International Dairy Federation's (IDF) World Dairy Summit 2024 took place from October 15 to 18, 2024 in Paris. The aim of this international event is to bring together each year the various players in the global dairy sector. The themes of this year were Sustainability, Food Safety and Attractiveness.

Several STLO members were present at the event.

Tanguy Saviard, Juan Carlos Ariute and Coralie Goetz have presented the results of their doctoral and post-doctoral studies in the form of scientific posters:

“Understanding goat's milk digestion and its impact on gastrointestinal homeostasis by various approaches” by Saviard et al., 2024.

“Endogenous bacterial community from whey starter “PINGO” used in artisanal cheesemaking from Minas Gerais, Brazil” by Ariute et al., 2024.

“Lacticaseibacillus paracasei application on the bovine teat skin: impact on animal health and dairy processes” by Goetz et al., 2024.

“What factors are responsible for the limitation of the drainage of acid-rennet gels” by Barrucand et al., 2024.

In addition, Yves Le Loir (Director of STLO) accompanied by Damien Paineau (Executive Director of “Ferments du future”) gave a presentation on “Ferments du futur: a French initiative to accelerate innovation through fermentation”.
