VEG&LAIT welcomes new recruits!

The VEG&LAIT project, led by the STLO and funded by the French National Research Agency, was launched in March 2024 for a period of five years. It aims to create a sustainable mini-sector for mixed milk and legume products, with the help of local processors.

Eighteen months after its launch, VEG&LAIT has entered its cruising phase. The Center for Taste and Food Sciences (UMR CSGA, Dijon) has just recruited Florian Maréchal as a doctoral student to continue the work initiated by the “LOVE” transversality on consumer expectations regarding mixed milk and legume desserts. He will be supervised by Juliana Melendrez-Ruiz and Gaëlle Arvisenet (CSGA).

The SECALIM unit, specialized in food safety and the multi-criteria assessment of risk/benefit balance of food, welcomed Mohamed Traoré, also a doctoral student, a month ago, and Cyrielle Devlies, a veterinary thesis student, in September. They are supervised by Jeanne-Marie Membré and Louis Delaunay. Mohamed is also co-supervised by Gaëlle Tanguy (STLO). Their topics focus on identifying any microbiological hazards and contaminants in mixed milk-legume products, assessing the associated risks, and proposing control measures.

Since early November, UMR STLO has finally been co-supervising Rafi Fadhil's master's thesis with Adeline Boire (UMR BIA) on the evaluation of the protective effect (known as “chaperone”) exerted by milk caseins on plant globular proteins during heat treatment. Rafi is welcomed as part of the international cooperation that BIA maintains with Wageningen University.

These young colleagues are joining our laboratories and, for VEG&LAIT, the young scientists already recruited for the project: Gabrielle Jagorel, engineer at STLO, Blandine Renault and Maïté de Sainte-Agathe, both PhD students at UMR Agronomy. Blandine has been recruited for the project and Maïté is referring to it as a case study. Our agronomist colleagues are also expected to recruit a postdoctoral fellow soon.
